Sensory Description:
A well-dialed cup of Las Margaritas Natural Gesha is full of brightness and complexity. It is an excellent example of the intersection between high quality agronomy, diligent processing, and a variety that continues to impress.
You can expect bright notes of fresh cherry and raspberry on the front. This brightness is supported by a very fruity sweetness that reminded me of peaches, apricots, and lemon meringue. You’ll also get many sweet floral notes like hibiscus, rosehip, and vanilla. The texture begins quite syrupy and then transitions into a pleasant velvety quality as the coffee cools. The fruit-like sweetness persists throughout, and the coffee finishes with notes of dark red grape and single-origin dark chocolate bar.
Dial Notes:
When dialing this coffee, I noticed that it required a much finer grind size than our typical neutral setting. This finer grind slowed the brew time down, but did not cause the brews to choke like some geshas do, which is why I used a traditional Hario V60 filter rather than the Sibarist Fast filter. With that in mind, don’t be afraid of brew times that are on the long end of our parameters, but definitely grind a little coarser if you notice an overly muddy brew bed after your first cup.
Under-extracted cups of this coffee didn’t have the sweetness and complexity of better dialed brews. They presented as overly bright, like cherry and lemon juice without the necessary sweetness to make it well rounded. The texture was also a little lacking, coming across as too delicate for what this coffee is capable of. It also had a relatively quick finish, unlike the better brews that lingered for longer in a positive way. On the next cup, I would recommend grinding a little finer.
Over-extracted brews of Las Margaritas Gesha muted the unique and lively acidity, leaning more into sweet and chocolatey notes. It reminded me more of chocolate syrup than fresh fruit. It was also quite heavy and a little drying on the finish. While still a high quality cup, the over-extraction masks a lot of the very complex and rare tasting notes this coffee is capable of. On the next brew, I would recommend grinding a little coarser.
