Sensory Description:

A well-dialed cup of Berruecos is a great example of a washed Colombian coffee. You can expect a lot of sweetness similar to candy bars, mellow fruits, and milk chocolate. The acidity is reminiscent of soft fresh fruits like sweet oranges, honeydew, and cantaloupe. These notes are combined with milk chocolate, caramel, and candied almond, resulting in a well-rounded cup that is almost equal parts fresh fruit and sugar browning flavors. The aftertaste pleasantly lingers and has notes of vanilla and light caramel.

Dial Notes:

This coffee brewed exceptionally well at our Neutral grind setting. For your first cup, I would recommend using your most common grind setting, and you’ll likely end up very close on the first brew.

Over-extracted cups of Berruecos lost some of the fresh fruit quality, causing the cup to lean more into the chocolate and almond notes. The front end of the sip, where you typically perceive most of the acidity, was pretty muted. While the cups still expressed a lot of sweetness, they also picked up a wafer-like flavor that lingered on the aftertaste. In this case, I would grind a little coarser for the next attempt.

Under-extracted cups had slightly thin and underripe citrus characteristics, meaning they presented with acidity but lacked some of the body and sweetness that better extracted cups had. It also had a very quick finish. The overall impression of the cup was that it had lost some of the complexity of more extracted brews. In this instance, I recommend grinding a little finer for the next cup.
